Warm Up with Sweet Potato Chili

By the calendar we should be bundled up eating a bowl of hot soup or chili by the fire, but Mother Nature has thrown us a curve and is keeping it rather mild for us.  Regardless of the outside temperature, this chili recipe is worth eating anytime.

Sweet Potato Chili

Ingredients:
2 lbs. hamburger
1 onion, chopped
1 teaspoon minced garlic
1 large can (29.5 oz) can tomato sauce
2 cups petite diced tomatoes, with juice
3 cups beef stock
1 cup of baby carrots

5 small sweet potatoes, peeled and cubed (about 4-5 cups)
2 bay leaves
½ tsp. thyme
2 tsp. salt
1½ tsp. black pepper
½ tsp. chili powder
dash of oregano
dash of red pepper flakes

 

Cooking Instructions

In a large saucepan, brown hamburger, onions and garlic. Drain off the fat and place it all into a crockpot.  Add all the remaining ingredients to the crockpot and stir to mix all together.  Let it simmer on low all day (8 hours) or on high for 5-6 hours.

 

This makes a rather large batch so there will be plenty left over to savor for a couple of meals.
